A recent talk of mussels reminded me of Ireland. ‘Crying cockles and mussels…’, you know. And then Ireland of Guinness. And Guinness… of oysters! The classic pairing I learnt about at the Guinness museum in Dublin and tried for myself a year and a half later in London (that’s quite a gap between theory and practice), at a cosy and classy place called Wright Brothers Oyster and Porter House, at their Borough Market branch, on a beautiful and memorable, crispy and sunny, early January evening.
PS The three oysters, the waiter told me, are from Jersey, Northumberland and north-east Ireland.
