Once that same January, when I dropped into Fortnum and Mason for one of my perfect cream tea breakfasts, I saw this curious cake on display. They told me it was Galette des Rois, a French puff pastry pie with frangipane filling traditionally made for Epiphany. They decorate it with a paper crown and hide a surprise inside.
So many beautiful holiday baking recipes out there, across countries, religions and cultures. Think of Rosh Hashanah, the Jewish New Year, which they’re celebrating these days, and the traditional honey cake. I actually tried baking it last summer for one of my uncles’ birthday, and it turned out delicious.
And hiding a surprise inside a pie, doesn’t it make you think of the Soviet winter vareniki tradition?
